Rookie in the Kitch...Tomato Feta Pasta Salad

I used whole wheat pasta and bocconcini instead...

My Verdict: Praiseworthy. Here's another recipe from Ina and she does not disappoint. This recipe is easy and quick. I've already made it again with pesto. Delish! Great as a side or summer picnic/potluck dish!

Rookie in the Kitch...Spinach Salad with Warm Bacon Dressing

Recipe found here...
I skipped on the egg as this salad was to be a side and I didn't want to have too heavy of a salad...
I used 3 handfuls of spinach, less than a 1/4 of an onion, 2 large mushrooms, 2 bacon strips, and I cut the dressing in half
As seen in my previous post...

My Verdict. Praiseworthy. I found this recipe online while googling, thinking it would be a perfect partner to my lasagna dish. It was delish and easy to make! Follow the recipe if you wanted it as a main, this would be perfect for lunch!

Ina has a bacon recipe that is yumm, I used the pre-seasoned ones from the grocery store.

Rookie in the Kitch...Lasagna with Italian Sausage

Meat mixture...
Cheese mixture...I skipped on the goat cheese and forgot the egg oops...
Assembly...(I used 6 sheets of De Cecco brand lasagna pasta)
Baked for 30 minutes at 400 degrees F or until sauce bubbling


My Verdict: Praiseworthy. I remember making lasagna in home economics class back in the day at school. I've longed to make it again and was ecstatic when I found a recipe in Ina Garten's cookbook. They didn't have Italian turkey sausage at my local market so I opted for a mild sausage instead(2). I used a 9 x 7.25 x 2.75 baking dish. I cut the recipe in half and this would be perfect for 4.

I think I'm In Love...

I first found Stina from a lovely interview Katherine did on her blog, and have since been following diligently (borderline stalking lol)...

Rookie in the Kitch...Mango Salsa

I usually cut the mango into pieces and score the insides. Either using a spoon to scoop out or my fingers
You can also peel the skin off and cut them into pieces then cubes

Remember that salsa recipe I made here...well now try adding mango's to it!

For the salsa:
3 tomatoes (mine were relatively on the smaller side, however you can use 2 med or larges if you love tomatoes)
1 ataulfo (adolfo) mango
1/4 of an onion (I used a red onion)
1 clove of garlic
handful of cilantro
1 wedge of lime
salt and pepper to taste
(I'm not a fan of too much onion or garlic, so use your discretion)

Chop the tomatoes, (I got rid of the insides) onions, cube the mango and mince the garlic and cilantro, place all in bowl and squeeze lime onto it. Add salt and pepper and mix. Set aside for the juices to mingle :)


Lastly, enjoy them with chips! My fave's are the yellow corn chips from Fresh is Best Salsa & Company...

Rookie in the Kitch...Smoked Salmon Frittata

I cut the recipe in half and that would be perfect for 4...
I baked mine for about 40 minutes or when fork comes out clean...

Smoked Salmon Frittata, fresh peaches and Chedder Cheese and Chives Biscuit

My Verdict: Praiseworthy. I LOVE Ina Garten! This was the first time I tried this recipe, and am eager to substitute the smoked salmon for bacon next time! I couldn't find any heavy cream at my local market so I used milk instead (gave up on making my own heavy cream, curdled both times). :( I also skipped the cheese...

I loooooveee her cooking show and I own 3 cookbooks from her, Highly recommend!!!

Rookie in the Kitch...Chicken Lettuce Wraps

Voila...ready to eat! Yummo!

My Verdict: Praiseworthy. As you've noticed I've been on a make your own food kick these days. Here's a recipe I thought would go great with the corn I made. I was feeling very fiesta! Love Mexican food and miss my gf dearly (that's you Cecilia!).

What you'll need...
1 head of lettuce or you can use taco shells, corn tortilla or even rice paper

For the salsa:
3 tomatoes (mine were relatively on the smaller side, however you can use 2 med or larges if you love tomatoes)
1/4 of an onion (I used a red onion, sweet is fine too)
1 clove of garlic
handful of cilantro
1 wedge of lime
salt and pepper to taste
(I'm not a fan of too much onion or garlic, so use your discretion)

For the guacamole:
1 ripe avocado use 2 if you want to use some as dip
1/4 of an onion (I used a red onion, sweet is fine too)
1 clove of garlic
handful of cilantro
1 wedge of lime
salt and pepper to taste

Place avocado in bowl and using a fork to mash until a creamy consistency(or if you prefer more chunky). Add chopped onions, minced garlic and cilantro. Add lime, salt and pepper to taste. Combine all the ingredients. Feel free to add more lime or other ingredients if you prefer...

For chicken:
1 skinless chicken breast (I used half)
1 Old El Passo taco seasoning mix (I used approx 2 teaspoons to season my half chicken breast)

In a pot, bring water to a boil (medium-high heat). Place cubed chicken in and cook for 5-7 minutes(depends how large you cut your chicken). Drain water, set at medium low heat and add a small amount of water and taco seasoning. Let simmer until liquid is reduced, stirring occasionally. (instructions are on the packet) I did mine for 10 - 15 minutes.

This made 7 wraps, plenty for 2 people. Don't forget you have corn on the cob as a side! I finished my meal with a peach. Yummo!!!

Rookie in the Kitch...

I'm starting a new series...Rookie in the Kitch!

I'd thought I'd share some recipes I've tried, and hopefully it will encourage some novices like myself...

Balsamic Chicken and Pesto Cucumber Salad (recipe here)
I had to julienne the cucumber (spiralizer on my wish list), hence the different sizes

Corn with Mayo, chilli pepper and lime AKA Crack Corn ( recipe here)
I boiled the corn with the tusks on in salt water, and let it cool about 5 mins before removing the tusks and slathering on the ingredients...

Next time I'll add Parmasan



My VerdictL Praiseworthy. The recipes were easy to follow and the salad is great for lunch or in my case dinner. The corn really is addicting! This is a great summer staple and I'm super excited to try it again with parmesan!

Rookie in the Kitch...Chedder Cheese and Chive Biscuits

Prepping my work station, adding the ingredients to a bowl
Using a fork to mix, end result should look like this
Used a 2 5/8 or 68 mm cookie cutter approx 1" high to shape the biscuits (if you don't have that use a spoon or 1/4 cup as reference
Oven set at 400 degrees, baking for 14 minutes or tops and sides lightly browned (I used a toothpick to check and if it comes out clean, you're ready to go!)
Here's an enlarged photo of the inside! Yummo!!

My Verdict: Praiseworthy. Have you ever tried Red Lobster's biscuits? Well this comes close to it! Mine were a little more dense and less cheesy, but that could be remedied with more cheese and if you didn't pack them down. I googled the recipe here, and added 1tablespoon of fresh chives(optional) and divided that into two (half into the mixture and the other half for the butter glaze). I also decreased the temp and traded the garlic powder for garlic salt instead.

Celtic Woman

Programs were $20
They also had other t-shirts available and CD's, however when I got there most were sold out...


My Verdict: Praiseworthy, Praiseworthy, Praiseworthy! I can not rave enough about this concert, seeing it Live was simply breathtaking...
I first heard of them one night while random channel surfing. I came upon this angelic voice and paused, seriously so moved that I watched the rest until way past my bedtime. (thank G for paid programming)

Some highlights for me; Bridge over troubled water (Lisa, she nailed it) and Ave Maria (Chloe, this was the song that stopped me dead in my tracks), also the violinist (Mairead) was on FIRE!!!
Certainly there were many times I felt the sky parting(in this case the roof, lol) and a beacon shown down from the heavens(they did an excellent job in the lighting department >_<). Their voices moved me so much I had chills and got misty eyed. Overall the experience was exhilarating and I would highly recommend seeing it if you have the opportunity. If they return to Vancouver I would love to go again...
