Yam Fries with Guacamole, Sour Cream and Bacon...Inspired by IG

I came upon this recipe on Instagram recently and decided to recreate it...

I used the store bought pre-cut yam fries
Sour cream
Avocado with salt and pepper mashed
1 sprig Green Onion
3 bacon strips

My Verdict: Praiseworthy. Follow the instructions on the package of the yam fries. I baked both the fries and bacon at the same time. I wanted the bacon to be super crispy so I left it for about 20 minutes. 
I also purchased a jar of japaleno peppers but for the life of me couldn't open it. I was so hungry, I gave up after a couple tries. They still tasted delish without, but if you want some heat add some pepper.
This will be perfect for movie night or a sports event. Apart from the bacon and sour cream this was pretty healthy.

Burrata Tomato Cucumber Salad...

This salad reminds me of one I used to have from L2, this one is super easy to make and very filling...

Ingredients:
3/4 Cucumber - peeled and cut (it's hiding underneath)
3 Tomatoes (I removed the seeds and cut them bite size)
1 tub of burrata cheese (next time I'll use half these were a bit too much to eat)
1/4 of red onion 
handful of basil
Extra Virgin olive oil, Balsamic Vinegar and Red Wine Vinegar ( I eyeballed about 3-4 tbs worth)
salt and pepper to taste

Humpday Happenings...Breakfast

As the weather is changing to cold and dreary I've been staying at home more often, with not much to do but bake or making something food related...

fresh out of the oven- plain croissants and milk chocolate croissants (I use the store bought Pillsbury croissants and use my filling of choice) 
 plated with butter and strawberry jam
quick breakfast- microwaved eggs, avocado, and hummus
- detox water and banana
ingredients for the salted butter chocolate cookies
dough is done and ready for fridge...
Another easy breakfast with egg omelet, avocado and mango

As you can tell there's a lot of breakfast! That's because it's the easiest for a novice like me, that and I'm usually quite motivated in the morning! Feed me lol

Humpday Happenings...Update

Sorry I haven't been updating as frequently(baby A caught a stomach virus :"( )... but here's some things I've been up to lately...

baking salted butter chocolate chip cookies...recipe here
new obsession: Hummus from Urban Fare and Pretzel Crisps, with cucumber fingers 
dinner- yams, spinach with onion and garlic, corn on the cob and a slice of ham
detox water- cucumber, mint and lemon with alkaline water
recent brunch- bacon, spinach, mushroom and egg cups, avocado and pineapple with my detox water


Hope everyone's having a productive midweek! Can the weekend come any sooner!

Spotted...Coach IPhone Case


Spotted this the other day and thought it was so cute! Tres convenient too if you just want to have your id and credit card with you. It's also made in saffiano leather, which is super durable and you don't notice the scratches. Available online only...

Breakfast...Proscuitto, Honey Ham Spinach Mushroom Cups

On a breakfast kick lately, that and it's the easiest to make...Start your day off with a good breakfast:)

Ingredients - 2 Mushrooms 
- Cilantro - handful
- 5 Eggs
- 3-4 slices Proscuitto (on a side note these were a bit salty for my liking so next time its bacon or another meat)
- 3-4 slices Honey Ham 
-  1/4 Onion - chopped
- Spinach - handful
* makes 6
- in a bowl crack eggs and season with Salt and Pepper (I used 4 and didn't have enough to fill the last cup so I did that one sunny side up- the top left)
- chop other ingredients except meats and combine into the egg
- in a muffin tin (coat with cooking spray) assemble the cups
- place proscuitto or ham around the edge and fill in the cups with the mushroom, spinach, onion and egg mixture 
- bake for 25-30 minutes at 350 degrees
- let cool for 5 minutes 
- plate with fruit or yogurt or oats or buns...

Breakfast...Chocolate and Ham and Cheese Croissants

We've finally moved and have internet and a working kitchen! You can not know how ecstatic I am with both!

Hope everyone had a lovely long weekend, the first thing I did was bake:)

Ingredients - store bought Crescent rolls
- Chedder
- Chocolate chips
- Honey Ham
Directions: follow instructions on package 
- scoop l tablespoon of chocolate chips or ham and cheese and lay on larger end
- roll and tuck the sharp end under 
- bake at 350 degrees until lightly brown
- let cool for 3-5 mins and enjoy!
Fresh out of the oven and ready to plate...
